Zucchini Noodle Soup

Who doesn't have a hankering for noodle soup here and there and everywhere? What a great lean and green substitute! 

You will need a spiralizer to make this recipe, this is the one I have. It's so affordable and makes so many amazing recipes! http://www.amazon.com/gp/aw/d/B0007Y9WHQ

INGREDIENTS
- veggie bouillon cube
- 3 cups of water
- 1 stalk of celery, chopped
- 1/2 red pepper, diced
- 1 zucchini, chop the two ends off and leave whole
- pepper and red chili flakes to taste
- handful of parsley, as garnish 

OPTIONAL
- cubed little pieces of tofu 

METHOD
1. Bring water to boil, add bouillon cube.
2. Add celery, red pepper, pepper and red chili flakes. Boil for 2 minutes, or while you spiralize the zucchini.
3. Spiralize the zucchini. Add to water. Boil for 1 minute or less!  This is where I would add tofu too!
4. Add to bowl and top with parsley!
An entire zucchini only has 20 calories! As opposed to the noodles I have had an obsession with for 10 years... they have a minimum of 200 calories! So ya, we're looking good.
