So I bought a bushel of collard greens from T & T, this awesome Chinese supermarket within a walks distance. Holy bushel! I got them to make the Tone It Up! wraps but there are only so many wraps that I need before they go bad!
I clicked the first link that popped up when I googled "collard greens recipe". And I landed this AMAZING & simple recipe for Sauteed Collard Greens! I'm going to have it with my tofu steaks (aka. baked Soyarie herb tofu) for lunch tomorrow. It was SO HARD not to eat it all, obvi I taste tested it though :)

I loved it so much that I made it with baby spinach & mixed it all together! I will make this for the rest of my wonderful life.
Note: I didn't use butter, just the olive oil.
