Sage-y Baked Falafels, 5 Grain Tabbouleh & Spinach!

This Sunday I took the time to make an awesome lunch for tomorrow! Spinach salad, topped with homemade falafels, tabbouleh and a mix of super seeds. I got the recipes all from the Fresh Vegan Cookbook.



For the falafels, I swapped mint with sage. For the tabbouleh, I swapped quinoa with quinoa/amaranth/lentils/brown rice/I forget the 5th one! I topped it with a blend of chia/sesame/pumpkin and flax seeds :)
This is from my favourite resto, I just got their newest cookbook & am innnn love! The other day I made a phenomenal soup from it which I'll make again in the coming days!

I also made Eggless Egg Salad. Now even if I wasn't a vegan, I wouldn't be an egg salad kinda lady but this is unnnnnreal!
