So I started yesterday, Feb 20, with the working out again. My butt & hammies are soooo sore from doing the Tone It Up DVD combined with their Valentine's Day youtube video.
My hearty & lean & green dinner was Broccoli Tofu Stir-Fry! Absolutely filling.

INGREDIENTS
- 1.5 tbsp low sodium soy sauce
- 2 tsp cornstarch
- 2 tsp olive oil
- 1 package of extra firm tofu (I cut them into cubes as you can see)
- 2.5 cups of broccoli (chopped)
- 1 cup of water
- 1.5 tsp ginger powder
- 1/4 tsp of cayenne
- 1 onion, diced
- 3 cloves of garlic, crushed or minced
METHOD
- sautee the garlic, onions & olive oil for about 5 minutes (til the onions are cooked through) on medium heat
- cut tofu into cubes or triangles
- add ginger, cayenne & broccoli and cook for about 7 more minutes (til broccoli is cooked)
- in a separate bowl, mix the cornstarch, soy sauce, tofu & water
- cook til the sauce thickens then we're good!
You can add it over brown rice for a ToneItUp approved lunch! If its for dinner, I'd leave the rice out ;)
