Quinoa Chili

I was going to make the St. Yves ground round chili but I discovered it may contain eggs so I decided to whip up a quinoa one instead! First time, it went sooo well.

INGREDIENTS
- 1 tbs coconut oil
- 1 clove crushed or chopped garlic
- 1 white onion (sized medium)
- 4 carrots, chopped
- 2 bell peppers (1 yellow, 1 green), chopped into larger chunks

NOW PUT THE ABOVE TO SAUTEE FOR 6 MINUTES.

INGREDIENTS CONT'D
- 1 tbs cumin
- 1 tbs cacao powder (superfood)
- 2 tbs chia seeds
- pinch cayenne
- pinch sea salt
- 1 tbs oregano
- 1 can of diced tomatoes
- 4 cups of water
- 1 package of organic quinoa (approx 1.5 cups, 340g)
- juice from 1 lime

Cook for 25 minutes, covered. Keep your eye on it so the bottom doesn't burn (like mine did!) & keep stirring!

It tastes absolutely amazing guys! & we all know how good quinoa is. I've been eating lots of beans lately & wanted to have a little bean break lol.
