Veggie Thanksgiving Pilaf

Thinking ahead to Thanksgiving (next week in Canada) & I think I should make a Pilaf. Mmmm pilaf, its been awhile and everybody loves rice. Especially pops. It's not the same with brown rice, so I'll be making it the traditional way with wild rice (the healthiest kind I can find).

INGREDIENTS
- 1/2c wild rice
- 2-3/4c vegetable broth
- 3/4c brown rice
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2tbsp olive oil
- 3c mushrooms, sliced
- 2 celery stalks, sliced
- 1/2tsp sage
- salt & pepper
- 1/3c chopped fresh parsley
- 1/2c black olives, diced
- 1/2c peas
- 1/2c sliced carrots

METHOD
- boil the broth in a large saucepan and add the wild rice. Cook for 15 to 20 minutes, then add brown rice. Cover & cook for 45 minutes (or til rice is done cooking).
- in a large pan, sautee the onions & garlic with the olive oil until they're soft & onions are carmelized (8-10 minutes). Add mushrooms, celery, spices, carrots & cook for 5 more minutes. Add more broth if you need to.
- cook the peas
- add the cooked rice, fresh parsley, olives & peas + the veggie mixture. Stir really well!

I took this recipe from about.com and made a few changes to it. I think its perfect now! For events & dinners, double or triple. It wouldn't totally suck to have leftovers!

I'll be a happy stuffed veggie this Thanksgiving, no need to ask me a million times if I'm full!
