Enter VEGAN SAAG PANEER!!! It's traditionally made with cheese, but really doesn't need it.
I'm making it for tomorrow, for my nonvegbutverywillingandamazingboyfriend's birthday.
INGREDIENTS
- 1 pkg extra firm tofu, diced into cubes
- 2-3 tbsp olive oil
- 1-2 clove garlic, chopped
- 1 white onion, chopped
- 3 tbsp curry powder
- 1 tsp turmeric
- 1 tbsp cumin
- 1/4 tsp ginger
- a dash or 3 of cinnamon
- 1/3 cup light coconut milk
- 6 bunches of spinach
- Heat up the olive oil on medium heat in a pan and sautee your onions and garlic. Once these are really soft (it may take awhile), add in your spinach. Spinach doesn't take that long to get soft, k?
- Next, throw in the light coconut milk and spices! Yes, stir around baby. Heat through.
- Now that this is all cooked through and flavourful, throw it in the blender, blend til smooth and throw it back in your pan.
- Add the tofu and leave for 3 minutes until warmed through.
- Serve on brown rice or eat alone!
