vegan saag paneer (tofu and spinach)

I have a lot of spinach.

Enter VEGAN SAAG PANEER!!! It's traditionally made with cheese, but really doesn't need it.

I'm making it for tomorrow, for my nonvegbutverywillingandamazingboyfriend's birthday.

INGREDIENTS
  • 1 pkg extra firm tofu, diced into cubes
  • 2-3 tbsp olive oil
  • 1-2 clove garlic, chopped
  • 1 white onion, chopped
  • 3 tbsp curry powder
  • 1 tsp turmeric
  • 1 tbsp cumin
  • 1/4 tsp ginger
  • a dash or 3 of cinnamon
  • 1/3 cup light coconut milk
  • 6 bunches of spinach
DIRECTIONS

  1. Heat up the olive oil on medium heat in a pan and sautee your onions and garlic. Once these are really soft (it may take awhile), add in your spinach. Spinach doesn't take that long to get soft, k?
  2. Next, throw in the light coconut milk and spices! Yes, stir around baby. Heat through.
  3. Now that this is all cooked through and flavourful, throw it in the blender, blend til smooth and throw it back in your pan.
  4. Add the tofu and leave for 3 minutes until warmed through. 
  5. Serve on brown rice or eat alone!
