Eggless Egg Salad


It's been awhile since I've put forth a #meatlessmonday recipe. My bad.

This bad boy makes up for it. This recipe is soooo delicious and so easy too! I copied it from a great cookbook, linked here.

breakfast sandwich!

Ingredients

1 package: Tofu, extra-firm pressed (400g)
1/3 cup:  Red onions, chopped (80ml)
1/3 cup: Celery, chopped (80ml)
3/4 cup to 1 cup: Mayonnaise (vegan type) (180-250ml)
1 tbsp: Dijon mustard
1/4 tsp: Sea salt
1/4 tsp: Freshly ground black pepper
1 tsp: Turmeric 

Directions

In a medium bowl, mash tofu until crumbly. Add remaining ingredients and stir together until combined.

Spread on your favorite sandwich bread or refrigerate until needed. Yields 4 - 6 servings.
