For meatless Monday, I bring to you my new favourite salad.
Ingredients
. Either arugula or baby spinach, two cups
. A couple of handfuls of vegan mozzarella cheese
. One to two handfuls of alfalfa sprouts
. One handful of almond slivers
. Your favourite homemade salad dressing, preferably a vinaigrette
Method
. Put the dressing on as soon as you are going to eat it and shake, shake, shake!

I write this to you while enjoying a dopio espresso with soy milk. Yum! Delicious pick me up after a rough weekend. I don't have my salad dressing recipe on me but I will update the post later to include the recipe I used!
